It’s another beautiful day in Paarl. In the distance you can see a bridge close to the Hugenote Tunnel.
The 2021 harvest is in progress at Olsen Wines.
The grapes are being sorted and prepared for fermentation.
Fermentation in Action
After being sorted, the grapes go into tanks. This is where they are fermented.
A closeup of the fermentation process can be seen in the video.
After the tanks, the grapes are transferred to wooden barrels for ageing.
